Chilli Salmon with Noodles Recipe

For a quick and filling meal this low calorie salmon dish is full of flavor and packs a punch with the spicy red chili! Of course you can make the dish as hot or mild as you wish by either adding more or less chili! Enjoy with some freshly squeezed lime juice and a pinch of fresh coriander.

Ingredients
- 1 medium red chilli pepper
- 2 medium spring onions
- 10g coriander leaves
- 2 block dry egg noodles
- 2 vegetable stock cubes
- 750ml water
- 2 small salmon fillets
- ½ tsp soy sauce
- ½ fresh lime
Method
De-seed and slice the red chilli pepper. Chop the spring onions diagonally. Finely chop the coriander.
Cook the noodles as per the pack instructions and divide between 2 bowls.
Heat the stock in a deep frying pan and when it is simmering, add in the salmon. Cook for 2 minutes then add the chilli, spring onions and the soy sauce and simmer for a further 3 minutes or until the salmon is firm to the touch.
Place a piece of salmon into each bowl and divide the cooking liquid between them. Sprinkle over some coriander and a squeeze of lime juice.
