Easy Sausage Casserole

A quick and easy comforting supper. Add a chunk of fresh bread for dipping if you have the calories.
Use a meat-free sausage substitute to make this dish vegetarian or vegan.

Ingredients
- 3 Carrots
- 3 Stalks Celery
- 200g Potatoes
- ½ Glass Red Wine (65ml)
- 2 Beef Stock Cubes
- 2 Tsp Wholegrain Mustard
- 4 Thick Pork Sausages
- 2 Tsp Flour
- 500ml Water
- Salt
- Black Pepper
Method
- Turn on the oven to 180C/gas mark 4.
- Peel and chop the carrots, potato, and celery into bitesize pieces.
- Put in a shallow oven-proof dish/tray with the thick pork sausages and pour over the red wine.
- Add the mustard and the flour, season with salt and pepper, and stir.
- Put in the oven for 10 minutes. While this is cooking make up the stock to 500ml with boiling water.
- After the ten minutes, pour in the stock to just up to the top of the sausages. Cook for a further 30 minutes until the veg is tender and the sausages are cooked through.
