Easy Sausage Casserole

A quick and easy comforting supper. Add a chunk of fresh bread for dipping if you have the calories.

Use a meat-free sausage substitute to make this dish vegetarian or vegan.

  • 3 Carrots
  • 3 Stalks Celery
  • 200g Potatoes
  • ½ Glass Red Wine (65ml)
  • 2 Beef Stock Cubes
  • 2 Tsp Wholegrain Mustard
  • 4 Thick Pork Sausages
  • 2 Tsp Flour
  • 500ml Water
  • Salt
  • Black Pepper


  1. Turn on the oven to 180C/gas mark 4.
  2. Peel and chop the carrots, potato, and celery into bitesize pieces.
  3. Put in a shallow oven-proof dish/tray with the thick pork sausages and pour over the red wine.
  4. Add the mustard and the flour, season with salt and pepper, and stir.
  5. Put in the oven for 10 minutes. While this is cooking make up the stock to 500ml with boiling water.
  6. After the ten minutes, pour in the stock to just up to the top of the sausages. Cook for a further 30 minutes until the veg is tender and the sausages are cooked through.
