  • 2 skinless chicken breast fillets
  • 4 large carrots
  • 1 medium onion
  • 25g closed cup mushrooms
  • 1 medium green pepper
  • 1 tbsp olive oil
  • 30g mung bean sprouts
  • 1 tsp root ginger


  1. Finely slice the chicken, carrots, onion, mushrooms and peppers.
  2. Heat the olive oil in a large pan. Add the chicken and vegetables, and mix the ginger through the mixture.
  3. Stir-fry for 5-10 minutes or until the chicken is cooked through.
