Stir-Fry Chicken Recipe

- 2 skinless chicken breast fillets
- 4 large carrots
- 1 medium onion
- 25g closed cup mushrooms
- 1 medium green pepper
- 1 tbsp olive oil
- 30g mung bean sprouts
- 1 tsp root ginger
- Finely slice the chicken, carrots, onion, mushrooms and peppers.
- Heat the olive oil in a large pan. Add the chicken and vegetables, and mix the ginger through the mixture.
- Stir-fry for 5-10 minutes or until the chicken is cooked through.
