  • 100g onion
  • 1 red pepper
  • 254g breaded chicken breast fillets
  • 400g chopped tinned tomatoes
  • 100g cooked Basmati rice


  1. Chop onion and pepper and fry until soft.
  2. Chop chicken breast and add to the pepper and onion fry until lightly browned.
  3. Stir in curry paste and coat the chicken.
  4. Add tomatoes and stir well.
  5. Bring to the boil and then simmer for around 15mins or until chicken is cooked.
  6. Cook rice as instructed on packet.
