Chicken & Apple Curry Recipe

This curry is really simple to make and low in calories, fat and carbs. Try something different with this chicken and apple curry, delicious served with rice or a naan bread.

Ingredients
- 100g red onions
- 227g golden delicious apples
- 1 garlic clove
- 500g chicken breast diced
- 3 sprays sunflower oil spray
- 25g medium curry powder
- 1 can chopped tomatoes
- 227g passata
- 10g chicken stock cube
- 5 tbsp canderel sweetener
- 1 tsp mixed herbs
- 285ml water
Method
- Chop onions, apples and garlic.
- Cube the chicken breasts removing excess fat.
- Spray pan with low cal oil spray and fry onion and garlic until soft.
- Add the chicken and curry powder, fry for 5mins.
- Add the apple, tomatoes, passata, stock cube, sweetener, herbs, water and simmer for 30mins.
Serve with veg or rice
