Super Quick Chicken and Chorizo Quesadilla

With sliced Jalapenos, this simple, quick and flavoursome quesadilla has a warming kick a perfect, low calorie evening pick-me-up.

Ingredients
- 80g Skinless Chicken Breast
- 2 Mini Tortilla Wraps
- 30g Chorizo
- 10 Pumps Olive Oil Spray
- 1 Tbsp Sliced Pickled Jalapenos
- ½ Red Pepper
- 15g Grated Cheddar Cheese
- 50g Prepacked Mixed Leaf Salad
Method
- Dice the chicken breast into small bitesize pieces. Finely chop the chorizo. De-seed and dice the pepper. Grate the cheese.
- Put a non-stick frying pan on a medium heat with 10 pumps spray oil. Add the chicken, chorizo, pepper, and jalapenos - sauté until he chicken is cooked through, then remove from the pan (leaving any cooking juices).
- Place 1 mini tortilla in the pan and toast briefly, remove and put another mini tortilla in the pan.
- Top with the chicken mixture and sprinkle on the cheese. Cover with the other tortilla.
- Once the cheese has melted remove from the pan, and serve with the mixed leaf salad.
