Ingredients
- 1 small egg
- 85g fresh tomatoes
- 5g butter
- 1 thin sliced wholemeal bread

Method
- Beat the egg and season to taste.
- Chop the tomato and stir into the egg.
- Melt the butter in a small pan, toast the bread.
- Scramble the egg and tomato to taste, pile onto the toast and enjoy.
A quick and easy breakfast, why not stir in a tablespoon of ground linseed or porridge oats to make a healthier alternative and add some slow digesting carbohydrate for sustained energy throughout the morning (but remember to add another 50.5 calories).
