A low calorie, simple beef salad that works great as a lunch, or as a light, easy dinner. Add some flakes of cheese or some other ingredients if you have the calories spare.

Ingredients

  • 150g potatoes
  • 25g red onion
  • 150g lean roast beef
  • 35g mixed salad leaves
  • 1 tbsp mayonnaise
  • 10g Dijon mustard

Method

  1. Cook the potatoes, either by boiling, or in the microwave.
  2. Chop the onions, and cut the beef into bite-sized pieces.
  3. Roughly chop the salad leaves. Put all the ingredients into a bowl and mix them.
  4. Mix the mayonnaise with the mustard and season to taste. Stir into the salad.
