Roast Beef Salad Recipe

A low calorie, simple beef salad that works great as a lunch, or as a light, easy dinner. Add some flakes of cheese or some other ingredients if you have the calories spare.

- 150g potatoes
- 25g red onion
- 150g lean roast beef
- 35g mixed salad leaves
- 1 tbsp mayonnaise
- 10g Dijon mustard

- Cook the potatoes, either by boiling, or in the microwave.
- Chop the onions, and cut the beef into bite-sized pieces.
- Roughly chop the salad leaves. Put all the ingredients into a bowl and mix them.
- Mix the mayonnaise with the mustard and season to taste. Stir into the salad.
