Quick Pasta Bolognese

Ingredients

  • ½ carrot
  • ¼ onion
  • ½ stalk celery
  • 100g extra lean minced beef
  • ½ x 400g can chopped tomatoes
  • 1 tsp tomato puree
  • 75g pasta, dry weight
  • 5 basil leaves
  • 1 tsp olive oil

Method

  1. Put a frying pan over a medium heat and a saucepan of salted water over a high heat.
  2. Peel and finely dice the carrot, onion and celery.
  3. Dry fry the minced beef until browned, stirring to avoid sticking. (If it starts to stick you can add a little water to stop it)
  4. Once the mince is browned add all the chopped vegetables, stir to mix then add the can of chopped tomatoes and tomato puree. Stir to mix thoroughly and lower the heat to a simmer.
  5. Meanwhile add the pasta to the boiling water and boil until al dente (around 8 minutes)
  6. Drain the pasta when cooked and serve warm topped with mince mixture and basil.
