Baked Ham and Egg Muffins
These muffins are really easy to make and a great make-ahead breakfast. You can make extras and keep in the fridge for up to 5 days. Re-heat in the microwave for 30 seconds.

Ingredients
- 4 Med Eggs
- 2 Spring Onions
- 10 Sprays Olive Oil
- 35g Sliced Ham
- 1 Pinch Salt
- 1 Pinch Black Pepper
Method
- Heat the oven to 160C/gas mark 3.
- Finely chop the spring onions. Beat together 4 medium eggs with a pinch of salt and black pepper. Finely dice the ham.
- Add the ham and onion to the egg.
- Spray 4 holes of a muffin tray with the oil and divide the mixture between them. Bake for 15-20 mins, until cooked through.
