Baked Ham and Egg Muffins

These muffins are really easy to make and a great make-ahead breakfast. You can make extras and keep in the fridge for up to 5 days. Re-heat in the microwave for 30 seconds.

  • 4 Med Eggs
  • 2 Spring Onions
  • 10 Sprays Olive Oil
  • 35g Sliced Ham
  • 1 Pinch Salt
  • 1 Pinch Black Pepper


  1. Heat the oven to 160C/gas mark 3.
  2. Finely chop the spring onions. Beat together 4 medium eggs with a pinch of salt and black pepper. Finely dice the ham.
  3. Add the ham and onion to the egg.
  4. Spray 4 holes of a muffin tray with the oil and divide the mixture between them. Bake for 15-20 mins, until cooked through.
