Gnocchi with Asparagus, Olives & Pesto

Delicious Italian gnocchi dish that's quick and easy, on your table in 20 mins. Vegetarian, easily adaptable to vegan, it's a fresh and tasty evening meal for only 380 calories.

Ingredients
- 125g gnocchi, premade
- 4 asparagus spears
- 6 cherry tomatoes
- 6 black olives, pitted
- 1 tbsp green pesto
- 1 tbsp parmesan cheese

Method
- Put a Saucepan of water over a medium-high heat and a steamer on top of that.
- Add the gnocchi to the water and boil for 2-3 minutes until it floats to the surface.
- Place the asparagus in the steamer ontop of the gnocchi and steam while the gnocchi cooks.
- Halve the cherry tomatoes and chop the olives.
- Drain the gnocchi and asparagus once its cooked. Add the pesto, olives, tomatoes and asparagus into the pan and mix so that everything is nicely coated.
- Top with grated parmesan and enjoy.
