Cut the Crepe

Shrove Tuesday is a MUST in the Hudson household. I’m very partial to a pancake and Lovely Husband is too. We don’t limit our pancake consumption to just one day a year they feature reasonably regularly on our menu – partly because they are so quick to make; partly because they are so versatile, and latterly because the WLR database has a wide selection of recipes for those of us who want to cut the calories without cutting the crepe.
I love the fact that they can be savoury or sweet. One of my favourite fillings is a WLR-approved basic bolognaise-type filling of mince, onion, tomato and herbs. I usually have a tub or two of the mince mixture in the freezer as it’s so easy to rustle up a pasta dish, or a tasty chilli. It’s great on baked potatoes and utterly delicious in a pancake.
I was going to make a savoury option for Shrove Tuesday 2014 but I found myself perusing the WLR database and mulling over a few ideas of my own.
I have to confess I have done a “dry run” on a new filling that I’m planning to serve on Tuesday. We have friends coming over for supper and Lovely Husband and our guests will be sitting down to pizza and salad (I shall pass on the pizza) and dessert is going to be the basic WLR pancake filled with poached pears and topped with low fat Greek-style toffee yoghurt. I’m biased, but they are absolutely delicious and it’s impossible to guess that they are “weight-loss friendly”.
One of the things I love about WLR is the fact that, whatever the occasion, a quick hit on the recipe database throws up endless possibilities (and you know how much I love possibilities…). Whether it’s Christmas, Easter, a family birthday, or just a plain old “I don’t know what I want to eat…” moment – keying in a few basics into the search box always brings up long lists of inspiration. Importantly, most of them are quick and easy to prepare; the majority of them have been submitted by fellow WLR members so they are tried and tested.
I did spend rather longer than I had planned perusing the “pancake” section when I was looking for inspiration. I had the basic WLR batter mix already but just wanted to see what other ideas the canny WLR team and members had put together.
It seems that no matter what your pancake preference is, there is something on the list that will whet your appetite and tickle your taste buds.
The great thing is that I can stick to my daily allowance but still enjoy the treat of pancakes on Shrove Tuesday. I know that Lovely Husband and our dinner guests will also enjoy them and have no idea that they are eating the “diet version” of a traditional favourite. That’s the beauty of the WLR approach. Nothing is “banned” and calories can be earned by exercise, or carried over during the week so that no matter what the occasion, it is possible to enjoy great food without it causing a diet disaster.
Now, if you’ll excuse me… I need to head to the supermarket to find some pears to poach…
