Venison Steak with Salsa

Ingredients

700g

Venison Steak
1 tsp Extra Virgin Olive Oil
15g Salted Butter
1 tbsp Extra Virgin Olive Oil
3 medium Tomatoes
1 medium Spring Onion
1 clove Garlic
150g Cucumber
1 tbsp Fresh Mint
5g Fresh Basil
320g Baby Leaf Salad
¼ tsp Sea Salt
¼ tsp Freshly Gound Black Pepper

Method

  1. Turn on the grill to a medium/high heat.
  2. Brush the venison steaks with 1 tsp of the olive oil and season with salt & pepper.
  3. Cook under a hot grill on both sides for 4-5 mins per side. During grilling brush with a little oil & butter.
  4. For the salsa:

    3 tomatoes
    4 spring onion
    1 clove garlic
    ½ cucumber chopped
    1 Tbsp Fresh mint finely chopped
    Salt & pepper
    10 Basil leaves, torn

    To make the salsa, mix all the ingredients together & season to taste.
  5. Serve the steak, topped with salsa, next to a baby leaf salad.
