Summer Pudding

Ingredients

  • 200 g Strawberries, Fresh, Raw, Average
  • 100g Raspberries, Fresh, Raw, Average
  • 75 g Sugar, Caster, Average
  • 200g Fromage Frais, Low Fat, BGTY, Sainsbury's*
  • 4 Slice/151.6g Bread, White, Classic, Medium Sliced, Hovis*
  • 100g Blueberries, Tesco*
  • 6 g Cornflour, Average

Method

  1. Preheat the grill to high and lay the slices of bread slightly overlapping in a shallow flameproof dish.
  2. Sprinkle 2 tbsp of the sugar over the bread and grill for about two minutes until the sugar begins to caramelise.
  3. Mix 2 tsp of cornflour into the fromage frais. Wash and chop the fruit into bite sized pieces.
  4. Pile the fruit down the centre of the bread and sprinkle with 1 tbsp of the sugar. Drop spoonfuls of the fromage frais mixture on top, then sprinkle the rest of the sugar over evenly.
  5. Grill for about 6-8 minutes, until the fromage frais has browned and everything else is starting to bubble and turn juicy.
  6. Serve hot, spooned straight from the dish.
