Best for the summer months, this strawberry salsa is perfect for the BBQ! Serve with grilled chicken and salad, but don't forget to add the extra calories!

- 250g strawberries
- ½ onion
- 1 yellow pepper
- 1 green chilli pepper
- 1 tbsp caster sugar
- 1 tsp lime juice
- 1 tbsp fresh mint
- Wipe and hull the strawberries then chop into pieces, peel and finely chop the onion, de-seed and chop the yellow pepper. Place the prepared fruit/vegetables in a serving bowl.
- Slice the chilli in half lengthways, de-seed finely chop the pieces. Add to the strawberry mixture.
- Add the sugar, lime juice and mint and mix well. Leave to infuse for about 30 minutes.
Serve with grilled or barbecued chicken.
