Sprouts in Garlic Butter

Ingredients

  • 800g Butternut Squash
  • 5 Sprays Sunflower Oil Spray
  • 4 Cloves Garlic
  • 8 Spring Onions
  • ½ Tsp Fennel Seeds
  • 1 Tsp Cumin Seeds
  • 1 Tsp Mild Curry Powder
  • 45ml Light Salad Dressing
  • 1 Tsp Coriander Seeds

Method

  1. Trim the sprouts and boil or steam for around 10 minutes until tender. Strain and put to one side.
  2. Crush the garlic and add to the butter, melt over a medium heat before stirring in the sliced mushrooms.
  3. Once the mushrooms have browned toss in the sprouts, sprinkle with parsley and squeeze over the lemon juice. Serve immediately.

Can be served warm or cold.
