Chilli Salmon with Noodles
Spice up your evening meal with this flavoursome dish. For something simple but delicious this low calorie recipe is a perfect choice!

Ingredients
- 2 blocks of egg noodles
- 2 vegetable stock cubes
- 750ml water
- 2 salmon fillets
- 1 red chilli pepper
- 2 spring onions
- ½ tsp soy suace
- 10g fresh coriander leaves
- ½ Lime lime
Method
- De-seed and slice the red pepper. Chop the spring onions diagonally. Finely chop the coriander.
- Cook the noodles as per the pack instructions and divide between 2 bowls. Heat the stock in a deep frying pan and when it is simmering, add in the salmon.
- Cook for 2 minutes then add the chilli, spring onions and the soy sauce and simmer for a further 3 minutes or until the salmon is firm to the touch.
- Place a piece of salmon into each bowl and divide the cooking liquid between them. Sprinkle over some coriander and a squeeze of lime juice.
