Chilli Salmon with Noodles

Spice up your evening meal with this flavoursome dish. For something simple but delicious this low calorie recipe is a perfect choice!

  • 2 blocks of egg noodles
  • 2 vegetable stock cubes
  • 750ml water
  • 2 salmon fillets
  • 1 red chilli pepper
  • 2 spring onions
  • ½ tsp soy suace
  • 10g fresh coriander leaves
  • ½ Lime lime


  1. De-seed and slice the red pepper. Chop the spring onions diagonally. Finely chop the coriander.
  2. Cook the noodles as per the pack instructions and divide between 2 bowls. Heat the stock in a deep frying pan and when it is simmering, add in the salmon.
  3. Cook for 2 minutes then add the chilli, spring onions and the soy sauce and simmer for a further 3 minutes or until the salmon is firm to the touch.
  4. Place a piece of salmon into each bowl and divide the cooking liquid between them. Sprinkle over some coriander and a squeeze of lime juice.
