New Potato & Artichoke Salad

Ingredients

  • 1 Jar/280g Artichoke Hearts, Chargrilled, in Olive Oil, Cooks Ingredients, Waitrose
  • 15g Mint, Fresh, Average
  • 1½ Tbsps/22.5g Vinegar, Wine, White, Average
  • 10g Sugar, Caster, Average
  • ¼ Tsp/1.3g Salt, Table, Average
  • ¼ Tsp/0.5g Pepper, Black, Freshly Ground, Average
  • 500g Potatoes, Jersey Royal, New, Raw, Average
  • 2 Servings/150g Beans, Green, Fine, Average
  • 125g Tomatoes, Cherry, Average

Method

  1. Make the dressing:
    Drain the oil from artichokes into a measuring jug. Take the mint leaves off of the stalks and add to a liquidiser. Add the oil, vinegar, sugar and seasoning. Liquidise until smooth.
  2. Bring a large pan of water to the boil. Add the potatoes, bring back to the boil, then simmer gently for 12-15 minutes or until just tender. Drain. Blanch the green beans in boiling water for 3 minutes. Drain. Turn on the grill to a medium heat.
  3. Warm the artichoke hearts under the grill. Halve tomatoes. Mix all these vegetables together. Pour over the dressing. Mix well. Leave to cool before serving.
