  • ¼ Tsp/0.5g Pepper, Cayenne, Ground
  • 4 Servings/400g Plaice, Fillets, Raw, Average
  • 1 Lime/85g Lime, Raw, Weighed with Peel & Seeds, Average
  • 5g Dill, Fresh, Average
  • 1 Tbsp/15ml Oil, Olive, Extra Virgin, Average
  • 1 Sm Onion/90g Onions, Raw, Average
  • 1 Stalk/40g Celery, Raw, Trimmed
  • 1 Sm Pepper/13g Peppers, Chilli, Red, Raw, Unprepared, Average
  • ¼ Tsp/1.3g Cumin, Seeds, Ground, Schwartz
  • ¼ Tsp/0.5g Coriander, Seeds, Average

  • 1 Tbsp/15g Tomato Puree, Average

  • ¼ Tsp/0.5g Pepper, Black, Freshly Ground, Average

Method

  1. Preheat the oven to 180°C (350°F, Gas Mark 4)
  2. Heat the oil in a heavy-based pan and cook the onion, celery, chilli pepper and spices for about 5 minutes over very low heat.
  3. Add red and green peppers and the remaining ingredients and bring to the boil. Reduce heat and simmer 15-20 minutes, stirring occasionally. Set aside while preparing the fish.
  4. Mix the cream cheese, oregano and cayenne pepper together in a separate bowl and set aside.
  5. Skin the fillets carefully
  6. Spread the cheese filling on all 4 fillets and roll each up. Secure with cocktail sticks.
  7. Place the fillets in a lightly greased baking dish, cover and cook for 10 minutes in the preheated oven.
  8. Pour over the tomato sauce and cook a further 10 - 15 minutes or until the fish is cooked (it will feel firm and look opaque). Garnish with lime slices and dill.
