Plaice a la Provencale

This French inspired fish recipe is not only low calorie, but also low carb and high in protein! A great dinner to keep you feeling fuller for longer.

Ingredients

  • 2 onions
  • 1 sweet peppers
  • 336g courgette
  • 340g tomatoes
  • 400g plaice fillets
  • 6 slices fresh lemon
  • 5g fresh coriander
  • 2 tbsps olive oil

Method

Preheat the oven to 190°C (375°F, Gas Mark 5)

  1. Peel, then chop the onions into wedges. De-seed and chop the pepper into strips. Cut the courgette into slices and the tomatoes into wedges.
  2. Put all of the vegetables into a baking dish. Lay plaice fillets on top. Cut lemon into wedges.
  3. Add two wedges to the dish and squeeze the juice from the remaining wedges over the fish fillets. Top with coriander leaves. Drizzle over olive oil.
  4.  Bake for 30 mins or until the flesh is moist and white
