Plaice a la Provencale
This French inspired fish recipe is not only low calorie, but also low carb and high in protein! A great dinner to keep you feeling fuller for longer.

- 2 onions
- 1 sweet peppers
- 336g courgette
- 340g tomatoes
- 400g plaice fillets
- 6 slices fresh lemon
- 5g fresh coriander
- 2 tbsps olive oil
Preheat the oven to 190°C (375°F, Gas Mark 5)
- Peel, then chop the onions into wedges. De-seed and chop the pepper into strips. Cut the courgette into slices and the tomatoes into wedges.
- Put all of the vegetables into a baking dish. Lay plaice fillets on top. Cut lemon into wedges.
- Add two wedges to the dish and squeeze the juice from the remaining wedges over the fish fillets. Top with coriander leaves. Drizzle over olive oil.
- Bake for 30 mins or until the flesh is moist and white
