Kale and Chorizo Soup

Prep time 15 mins | serves 6 | 459 calories per serving

Ingredients

  • 1 Tbsp/10g Oil, Olive, Extra Virgin, Tesco
  • 1 Sm Onion/90g Onions, Raw, Average
  • 600g Sausage, Chorizo, Gb
  • 10 Cloves/30g Garlic, Raw, Average
  • 1000g Potatoes, White, Raw, Weighed with Skin, Flesh Only, Average
  • 200g Kale, Curly, Boiled in Salted Water, Average
  • 28ml Stock, Chicken, Simply Stock, Knorr
  • 1 Tsp/5g Salt, Table, Average
  • 1 Tsp/2g Pepper, Black, Freshly Ground, Average

Method

  1. Dice the onion and finely chop the garlic. Wash the kale and remove the stems. Peel and dice the potatoes. Thickly slice the sausage.
  2. Heat the oil and cook the onion and sausage over a low heat for about 20 minutes until soft.
  3. Stir in the garlic and potatoes and cook for a further 10 minutes.
  4. Add the kale leaves and cover with the stock.
  5. Simmer for 30 minutes adding more stock to keep everything covered.
  6. Season to taste and serve with crusty bread.

This is very similar to caldo verde, which is understandable, as this is a Brazilian recipe. It's very filling.
