Kale Caldo Verde

Ingredients

  • 2 Tbsps/20g Oil, Olive, Extra Virgin, Tesco
  • 3 Sm Onions/270g Onions, Raw, Average
  • 6 Cloves/18g Garlic, Raw, Average
  • 8oz/227g Sausage, Chorizo, Average
  • 227g Potatoes, White, Raw, Weighed with Skin, Flesh Only, Average
  • 1lb/454g Kale, Curly, Raw, Average
  • 1 Tsp/5g Salt, Table, Average
  • 1 Tsp/2g Pepper, Black, Freshly Ground, Average

Method

  1. Although this is quite high in fat, it's a very satisying meal for Winter.
  2. Peel and slice the onions.
  3. Peel the potatoes and cut them into small chunks.
  4. Remove the "ribs" from the kale, then roll the leaves up lengthwise and slice them into long thing strips.
  5. Peel and crush the garlic.
  6. Slice the chorizo.
  7. Heat the oil in a large pan, then gently sweat the onions, garlic and chorizo slices.
  8. Remove the chorizo and set aside, then add the potatoes to the pan.
  9. Add enough water to cover the potatoes. Bring to the boil and simmer until soft.

    (Optional: Remove the pan from the heat and blend the contents).
     
  10. Return the soup to the pan and add the kale, and the chorizo.
  11. Season to taste with salt and pepper.
