Ingredients

  • 1362g cauliflower
  • 112g ginger root
  • 2 tbsps salt
  • 2 tsps turmeric
  • 1 tsp chilli powder
  • 1 tbsp mustard seeds
  • 2 tsps garam masala
  • 12 tsps brown sugar
  • 3 tbsps white wine vinegar
  • 1 juiced lemon

Method

  1. Break the cauliflower into small pieces, wash and place in a saucepan with a little water. Bring to the boil and cook for approx 8 minutes until cooked but still firm, drain and cool.
  2. Mix in a bowl with the ginger.
  3. Sprinkle on the salt, turmeric, chilli, mustard seeds and garam masala. Mix well.
  4. In a small saucepan, dissolve the sugar into the vinegar and lemon juice and boil together for a few minutes. Pour over the cauliflower.
  5. Mix again and put into jars.
  6. Keep in a warm place for a few days.
