Carrots with Tarragon
A great side dish for a hearty Sunday roast, these tasty carrots are only 72 calories per serving!

- 700g carrots
- 25g butter
- 2.5g salt
- ¼ tsp black pepper
- 1 tbsp tarragon
- Peel the carrots and place in a pan of boiling water and cook for 4-5 minutes until almost tender. If the tops are still on, you can leave them on.
- Drain, return to the pan with a close-fitting lid, then add butter and season with sea salt and black pepper.
- Put on a high heat and, as soon as the butter is melted, add chopped fresh tarragon leaves and mix together.
- Tip the carrots and cooking juices into a warm dish and serve immediately.
