Bubble & Squeak

Ingredients

  • 1lb/454g Potatoes, Boiled, Average
  • ½lb/227g Cabbage, Boiled, Average
  • 100g Brussels Sprouts, Boiled, Average
  • 1 Tsp/5g Salt, Table, Average
  • 1 Tsp/2g Pepper, Black, Freshly Ground, Average
  • 6 Tbsps/90ml Oil, Vegetable, Average

Preparation

  • Chop the cooked vegetables
  • Mash the potatoes

Method

  1. Add cabbage, Brussels’ sprouts, salt and pepper to the mashed potato and mix well. Divide the mix into six equal patties.
  2. Heat the oil in a large pan and fry the patties for 3-5 minutes on each side, or until golden brown.

Serving suggestion

Bubble and squeak is traditionally served with cold ham or other meats, why not try adding a boiled or poached egg to the mix for a really filling meal.
