Broccoli Soup

A wonderfully hearty soup, perfect for the family or to be enjoyed throughout the week. Pair with a lovely crusty roll, but don't forget to add the caloires!

  • 100g leeks
  • 1 onion
  • 454g broccoli
  • 300g potatoes
  • 2 tsps sunflower oil
  • 1 tsp soy sauce
  • 2 pints vegetable stock
  • ¼ tsp salt
  • ¼ tsp black pepper


  1. Wash and chop the leeks
  2. Peel and chop the onion
  3. Wash and cut broccoli into small pieces
  4. Peel and chop the potatoes
  5. Put the oil into a large saucepan and fry the onion and leek over a medium heat until tender.
  6. Add the soy sauce, potato, broccoli and stock to the pan. Bring to the boil and simmer until tender.
  7. Once cooked, blend in a food mixer and then season, with a little salt and pepper.
