Low Calorie Broccoli Soup
A wonderfully hearty soup, perfect for the family or to take to work throughout the week. Pair with a lovely crusty roll, but don't forget to add the extra calories!

Ingredients
- 100g leeks
- 1 onion
- 454g broccoli
- 300g potatoes
- 2 tsps sunflower oil
- 1 tsp soy sauce
- 2 pints vegetable stock
- ¼ tsp salt
- ¼ tsp black pepper
Method
- Wash and chop the leeks
- Peel and chop the onion
- Wash and cut broccoli into small pieces
- Peel and chop the potatoes
- Put the oil into a large saucepan and fry the onion and leek over a medium heat until tender.
- Add the soy sauce, potato, broccoli and stock to the pan. Bring to the boil and simmer until tender.
- Once cooked, blend in a food mixer and then season, with a little salt and pepper.
