Ingredients

  • 500g red cabbage
  • 250g beetroot
  • 200g Bramley apples
  • 1 onion
  • 50g salted butter
  • 3 tsp red wine vinegar
  • 60g light brown muscovado sugar
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper

Method

  1. Quarter the red cabbage and remove the core
  2. Peel and coarsely grate the beetroot
  3. Peel and coarsely grate the Bramley apple
  4. Peel and finely slice the red onion
  5. Put the cabbage, beetroot, apple and onion in a large casserole or deep sauté pan.
  6. Add the remaining ingredients, season well, cover with a tight-fitting lid and set the pan over a low heat
  7. Cook for about 1.5 hours, stirring occasionally until the cabbage is tender.
