A favourite dish with added green goodness – our spinach omelette recipe won’t ruin your diet.
- Recipe makes: 1 omelette
- Cook time: 5 mins
- Calories: 351
- 10 pumps extra virgin olive oil spray
- 25g spinach
- 2 medium eggs
- 20g Philadelphia light
- 60g french stick
- Heat the spray oil in a pan and wilt the spinach.
- Beat the eggs and add to the pan and scramble lightly.
- When nearly set stir in the soft cheese
Serve with a piece of French bread
