Greek Marinated Chicken

Ingredients

  • 120ml Oil, Olive, Extra Virgin, Average
  • 3 Cloves/9g Garlic, Raw, Average
  • 1 Tbsp/1.7g Rosemary, Fresh
  • 1 Tbsp/3.8g Thyme, Fresh, Average
  • 1 Tbsp/3.8g Oregano, Fresh
  • 2 Lemons/230g Lemon, Fresh, Raw, Average
  • 1 Med/1800g Chicken, Whole, Raw, Meat Only, Weighed with Bone & Skin, Average

Method

  1. Juice the lemons. Cut the chicken into pieces. Chop the fresh herbs. Crush the garlic.
  2. In a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator 8 hours or overnight.
  3. Heat grill to a high heat.
  4. Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear.
