Parsnip and Apple Soup

Ingredients
- 160g Parsnip, Tesco
- 7.5g Oil, Olive, Tesco
- 90g Apples, Cooking, Raw, Peeled, Average
- 10g Stock Cubes, Vegetable, Tesco
- 5g Rosemary, Fresh
- ½ Onion/60g Onions, Organic, Tesco
- 1 Clove/3g Garlic, Raw, Average
- 1 Tsp/1g Thyme, Dried, Ground
- ¾ Tsp/2.3g Cinnamon, Ground, Average
Method
- Heat oil, add onion and garlic, fry till soft.
- Add apple and parsnip and stir.
- Add stock, thyme and cinnamon.
- Cook till parsnip is soft; blend till roughly chopped/almost smooth.
- Serve with a sprig of fresh rosemary and chunky bread. yum :)
