Parsnip and Apple Soup

Ingredients

  • 160g Parsnip, Tesco
  • 7.5g Oil, Olive, Tesco
  • 90g Apples, Cooking, Raw, Peeled, Average
  • 10g Stock Cubes, Vegetable, Tesco
  • 5g Rosemary, Fresh
  • ½ Onion/60g Onions, Organic, Tesco
  • 1 Clove/3g Garlic, Raw, Average
  • 1 Tsp/1g Thyme, Dried, Ground
  • ¾ Tsp/2.3g Cinnamon, Ground, Average

Method

  1. Heat oil, add onion and garlic, fry till soft.
  2. Add apple and parsnip and stir.
  3. Add stock, thyme and cinnamon.
  4. Cook till parsnip is soft; blend till roughly chopped/almost smooth.
  5. Serve with a sprig of fresh rosemary and chunky bread. yum :)
