Broccoli Soup
Ingredients
- 285g Potatoes, Boiled, Average
- 450g Broccoli, Florets, Sainsbury's
- 1 Tbsp/15ml Oil, Sunflower, Average
- 1 Med Onion/90g Onions, Raw, Average
- 5=25 Cubes/500ml Stock Cubes, Chicken, Organic, Kallo
- 1 Tsp/3g Nutmeg, Ground, Average
- 1g Salt, Sea, Organic, Marks & Spencer
Method
- Sweat the chopped onion over gentle heat in the oil until glazed.
- Add broccoli stalks, florets, potatoes, stock, nutmeg and salt and pepper simmer gently until soft.
- Liquidize the soup and check the seasoning
- Optional: add 1 oz (30 g) unsalted butter to the hot soup and let it melt.
- Serve and garnish with chopped parsley
