Broccoli Soup

Ingredients

  • 285g Potatoes, Boiled, Average
  • 450g Broccoli, Florets, Sainsbury's
  • 1 Tbsp/15ml Oil, Sunflower, Average
  • 1 Med Onion/90g Onions, Raw, Average
  • 5=25 Cubes/500ml Stock Cubes, Chicken, Organic, Kallo
  • 1 Tsp/3g Nutmeg, Ground, Average
  • 1g Salt, Sea, Organic, Marks & Spencer

Method

  1. Sweat the chopped onion over gentle heat in the oil until glazed.
  2. Add broccoli stalks, florets, potatoes, stock, nutmeg and salt and pepper simmer gently until soft.
  3. Liquidize the soup and check the seasoning
  4. Optional: add 1 oz (30 g) unsalted butter to the hot soup and let it melt.
  5. Serve and garnish with chopped parsley
