Low Fat Sweet Pancake Recipes

 

Ditch your traditional sugar and lemon pancakes and squeeze one of our delicious sweet and fruity pancakes into your daily allowance instead? Each recipe is prepared in under 5 minutes, is low in fat, provides 1½ servings of fruit and is lower in calories than just 2 dull sugar and lemon ones*.

 

Raspberry, Coulis and Ice Cream Pancake Filling

Warm pancake filled with fresh Raspberries, topped with half-fat Ice Cream and drizzled with Raspberry Coulis. 


Caramelized Cinnamon Apple Pancake Filling

Granny Smith apples caramelized in low-fat butter, a sprinkle of brown sugar and dash of lemon juice and wrapped in a warm pancake, served with a dollop of low-fat creme fraiche.


Pineapple, Passion Fruit and Mango Pancake Filling

A simply exotic combination of fresh fruits served in a pancake.

 


*Based on 2 plain pancakes each topped with 1tsp sugar and 1tbsp lemon juice.
Excluding creme fraiche from the caramelized cinnamon apple filling.

 

 

 

 

Raspberry, Coulis and Ice Cream Filling

Makes 2 pancakes (serves 2)

 

Ingredients

  • 2 Pancakes - see Pancake Mix Recipe
  • 200g raspberries
  • 2 scoops / 100ml Vanilla Ice Cream, Soft Scoop, Light, Wall's*
  • 1 tsp icing sugar

Method

  1. Make the coulis:
    Puree a handful (50g) of raspberries with the icing sugar in a food processor until smooth. Strain through a fine sieve to remove the seeds and set aside.
  2. Fill the pancakes:
    Divide the remaining raspberries between the 2 pancakes, placing them in a line down the middle of each pancake.
    Fold the edges of the pancake over each other.
    Top with a scoop of ice cream.
  3. Drizzle with raspberry coulis.
  4. Enjoy immediately!

Caramelized Cinnamon Apple Pancake Filling

Makes 2 pancakes (serves 2)

 

Ingredients

  • 2 Pancakes - see Pancake Mix Recipe
  • 1 Large Granny Smith Apple
  • 1 tbsp Lemon Juice
  • ½oz/14g Half Fat Butter/Spread
  • 2 tsp Brown Sugar
  • ¼tsp Ground Cinnamon (or to taste)
  • 2 tsp/50g Half Fat Creme Fraiche (optional)

Method

  1. Peel, core and slice the apple into 12 wedges. Cut each wedge into 3 to make bite sized chunks. Drizzle with lemon juice.
  2. Heat the butter in a frying pan until sizzling, add the apple and cook on a high heat for 2 minutes (or until apple just begins to brown).
  3. Sprinkle with sugar and cinnamon and stir well to coat. Cook for a further 2-3 minutes until caramelized, remove from heat.
  4. Spoon ¼ apple mixture onto pancake and  top with 1 tsp Creme Fraiche (optional). Fold pancake in half, spoon further ¼ apple mixture on top and fold pancake in half again.
  5. Repeat for 2nd pancake.
  6. Serve immediately.

Pineapple, Mango & Passion Fruit Pancake Filling

Makes 2 pancakes (serves 2)

 

 

Ingredients

  • 2 Pancakes - see Pancake Mix Recipe
  • 1 Pack/200g Fresh Fruit Salad,
    we used Pineapple, Passion Fruit and Mango from Tesco's*

Method

  1. Spoon half the fruit salad onto each of the pancakes, fold and serve.
  2. Yes - this really is one for all kitchen cheats out there!
