Low Fat Savoury Pancake Recipes

 

These savoury pancake recipes are a great alternative on Shrove Tuesday - and a tasty way to increase your fruit and vegetable quota. Just make your pancakes, make the filling recipe, spoon the filling onto the pancake, fold and serve, Gorgeous!

 

Tex-Mex Pancake Filling

Per serving (2 pancakes):

Avocado and Tomato Pancake Filling

Per serving (2 pancakes):

Tex-Mex Pancake Filling

Makes 4 pancakes (serves 2)

 

 

Ingredients

  • 1 medium onion
  • 2 pepper (red, yellow or orange)
  • 1 tbsp olive oil
  • 200g cooked, skinless, boneless chicken breast
  • 415g can refried beans
  • juice on 1 lime
  • 2 tsp hot chilli sauce (Tabasco® or alternative) cut this to 1 if you prefer it mild

Method

  1. Roughly chop the onion, pepper and chicken.
  2. Fry the onion and pepper in the olive oil until they start to soften
  3. Add the chicken, refried beans, lime juice and hot chilli sauce to the pan and stir together until all of the ingredients are warmed through.
  4. Serve with the pancakes.

Avocado and Tomato Pancake Filling

Makes 2 pancakes (serves 1)

 

 

Ingredients

  • 1 medium avocado
  • 2 medium tomatoes
  • 2 tsp dried oregano
  • 1 tbsp rice vinegar
  •  tsp salt

Method

  1. Chop the avocado and tomatoes into small chunks,
  2. Combine all of the ingredients together in a bowl and mix well.
  3. Serve in the pancakes.

Cabbage Pancakes

Makes 4 pancakes (serves 2)

 

 

Ingredients

  • 1 baby cabbage
  • 1 medium onion
  • 1 clove garlic
  • 2 tbsp olive oil
  • 4 tsp soured cream

Method

  1. Trim the cabbage, slice in half and remove the stalk.
  2. Finely slice the onions and cabbage.
  3. Pulp the garlic.
  4. Fry the cabbage, onions and garlic together with the olive oil on a low heat until the cabbage is soft,
  5. Serve in your pancakes with a teaspoon of soured cream.
