Low fat and full of flavour our veggie kebab recipe adds a bit of
sophistication to winter party finger food - and it's sooo good for
you.

Ingredients
- 1 sweet red pepper, 160g
- 1 sweet yellow pepper, 160g
- 1 large courgette, 160g
- 100g button mushrooms
- 1 medium red onion, 120g
- 200g cherry tomatoes
- 2 tbsp lemon juice, 30ml
- 1 tbsp olive oil, 15ml
- 1 clove garlic, crushed, 3g
- 1 tsp dried mixed herbs
Method
- Deseed the peppers and cut into pieces about 1" square.
Slice the courgette into rings about ½" wide. Peel the onion
and cut into quarters.
- Whisk together the lemon juice, olive oil, crushed garlic
and mixed herbs.
- Put all the vegetables into a large bowl and stir in the
dressing till vegetables are evenly coated.
- Preheat the grill to medium. Thread the vegetables on to 8
metal skewers and cook under the grill for 10-12 minutes,
turning frequently until the vegetables are lightly charred.
