Ingredients

  • 1 sweet red pepper, 160g
  • 1 sweet yellow pepper, 160g
  • 1 large courgette, 160g
  • 100g button mushrooms
  • 1 medium red onion, 120g
  • 200g cherry tomatoes
  • 2 tbsp lemon juice, 30ml
  • 1 tbsp olive oil, 15ml
  • 1 clove garlic, crushed, 3g
  • 1 tsp dried mixed herbs

Method

  1. Deseed the peppers and cut into pieces about 1" square. Slice the courgette into rings about ½" wide. Peel the onion and cut into quarters.
  2. Whisk together the lemon juice, olive oil, crushed garlic and mixed herbs.
  3. Put all the vegetables into a large bowl and stir in the dressing till vegetables are evenly coated.
  4. Preheat the grill to medium. Thread the vegetables on to 8 metal skewers and cook under the grill for 10-12 minutes, turning frequently until the vegetables are lightly charred.
