This salad is great for a light, but special lunch – or to put
in a tub for work.
Serve with fresh crusty bread.

Ingredients
- 500g Red Apples
- 3Tbsp Lemon Juice
- 50g Mayonnaise
- 1 head of Celery
- 1 Red Onion
- 50g Walnuts
- 400g Cooked Chicken Breast
- 1 Romaine Lettuce
- 1 Tsp Black Pepper
Method
- Core and dice the apples, put into a bowl and stir in the
lemon juice to coat the apples.
- Thinly slice the celery and red onion, chop the walnuts
and add to apples. Stir in mayonnaise.
- Cut the chicken into bite size cubes and mix with the
other ingredients.
- Line a serving dish with the lettuce leaves and pile the
chicken salad into the centre.
- Add a sprinkle of freshly ground black pepper to taste.
