Chicken Waldorf

 

This salad is great for a light, but special lunch – or to put in a tub for work.

 

Serve with fresh crusty bread.
 

Nutrition Information Per Serving

Ingredients

  • 500g Red Apples
  • 3Tbsp Lemon Juice
  • 50g Mayonnaise
  • 1 head of Celery
  • 1 Red Onion
  • 50g Walnuts
  • 400g Cooked Chicken Breast
  • 1 Romaine Lettuce
  • 1 Tsp Black Pepper

Method

  1. Core and dice the apples, put into a bowl and stir in the lemon juice to coat the apples.
  2. Thinly slice the celery and red onion, chop the walnuts and add to apples. Stir in mayonnaise.
  3. Cut the chicken into bite size cubes and mix with the other ingredients.
  4. Line a serving dish with the lettuce leaves and pile the chicken salad into the centre.
  5. Add a sprinkle of freshly ground black pepper to taste.
