Chicken Salad and Plum Pickle Granary Sandwich

Ingredients

 

2 Slice/50g Bread, Granary

30.0 g Chicken, Breast, Roast, Average

30.0 g Chicken, Thigh, Roast, Average

1 Med/85g Tomatoes, Fresh, Raw, Average

1 Serving/5g Butter, Spreadable, Lighter, Lurpack*

10g Lettuce Round Average

2 Tsp/20g Chutney, Ploughman's Plum, EPC*

 

Method

 

1. I use chicken from a roast chicken I have cooked earlier in the day, I use a mixture of thigh and breast. You will need to slice this chicken to add to the sandwich.

2. Butter 2 slices of bread with a very thin layer of Lurpak spreadable.

3. Slice up the tomato and lettuce.

4. Add the chicken to the sandwich, then place the lettuce and tomato on top.

5. On the remaining slice of bread spread the pickle, add pepper to taste.
