Thai Papaya Salad

Ingredients

1 Unripe Papaya

70g Green Beans

150g Cherry Tomatoes

3 Cloves Garlic

1 Chilli Pepper

1 Dtsp Palm Sugar

1 Tbsp Thai Fish Sauce, Amoy*

1 Lime

Method

  1. Firstly you need to chop your papaya into matchsticks
  2. Then in your pestle and mortar, grind up the garlic, chilli and sugar into a paste, add in the green beans and tomatoes and bruise it all up together. (don't be shy about this - it feels unnatural but is essential)
  3. Chuck in a good slug of fish sauce and the juice of a lime and mix well
  4. Pour the whole lot over the papaya matchsticks, mix with salad spoons and serve immediately.
