Mozzarella, Avocado, Peach and Bacon Salad

Ingredients

200g Spinach Leaves

2 Peaches (approx 100g each, without the stone) quartered

1 Peach (approx 100g, without the stone) mashed

Juice of 1 Lemon

120g Ball Reduced-Fat Mozzarella Cheese

8 Rashers Danish Smoked Bacon Back, Waitrose*

1 Med Avocado, chopped

10 Basil Leaves

Method

  1. Combine all the ingredients into individual bowls.
  2. Place the 8 rashers of bacon under the grill - I like them crispy, but grill them to your liking.
  3. For the dressing combine the peach mash, lemon juice and basil leaves with salt and pepper - use a hand blender to make the dressing.
  4. Drizzle over the top of the salad and top with the bacon rashers.
  5. Serve in large bowls

If you prefer toss the salad leaves in the dressing first, then add the avocado, mozzarella, peaches and bacon.
