Mozzarella, Avocado, Peach
and Bacon Salad

Ingredients
200g Spinach Leaves
2 Peaches (approx 100g each, without
the stone) quartered
1 Peach (approx 100g, without the
stone) mashed
Juice of 1 Lemon
120g Ball Reduced-Fat Mozzarella
Cheese
8 Rashers Danish Smoked Bacon Back,
Waitrose*
1 Med Avocado, chopped
10 Basil Leaves
Method
- Combine all the ingredients into individual bowls.
- Place the 8 rashers of bacon under the grill - I like them
crispy, but grill them to your liking.
- For the dressing combine the peach mash, lemon juice and
basil leaves with salt and pepper - use a hand blender to make
the dressing.
- Drizzle over the top of the salad and top with the bacon
rashers.
- Serve in large bowls
If you prefer toss the salad leaves in the
dressing first, then add the avocado, mozzarella, peaches and
bacon. |
