Cous Cous and Cottage Cheese Salad

Ingredients

˝tsp Bouillon Powder, Swiss Vegetable, Marigold*

50g Cous Cous, Plain (dry weight)

1tsp Olive Oil

40g Cucumber

80g Cottage Cheese, Natural, GFY, Asda*

1 Med Stalk Celery

15g Green Capsicum Pepper

40g Cherry Tomatoes

20g Romaine Lettuce

15g Sweet Red Onions

5g Fresh Coriander Leaves, chopped

Method

  1. Boil water in kettle (about half a pint) Put bouillon powder, cous cous, olive oil in 1 pint bowl. Pour in sufficient boiling water to exactly cover the cous cous. Stir briskly, cover and leave for 10 minutes..
  2. Meanwhile quarter tomatoes, chop cucumber, celery and peppers into small pieces. Shred lettuce, finely chop red onion and coriander. Mix in bowl with cottage cheese.
  3. After 10 mins fluff the cous cous with a fork and mix well into the other ingredients.
