Make the most of succulent gooseberries in this family favourite dessert - delicious combination of slightly tart fruit with a sweet and crunchy topping.

 

Gooseberry Crumble

Ingredients

For Crumble Topping:

220g Flour, Plain, McDougalls

Pinch Salt

170g Butter, Spreadable, Reduced Fat, Lighter, Lurpak

100g Sugar, Caster, Average

For Crumble Filling:

450g Gooseberries, Dessert, Raw

2tbsp/24g Sugar, Caster, Average

Method

  1. Sift the flour into a bowl and add a pinch of salt.
  2. Add the butter and rub together until it resembles breadcrumbs, add caster sugar and mix together.
  3. Top and tail the gooseberries and place in a greased ovenproof dish along with the remaining 2tbsp of sugar.
  4. Cover completely with the crumble mix and place in a preheated oven 200c/400f for around 30-35 minutes until golden brown.
