Ingredients

 

125 g Margarine, Soft, Tub, Stork

40 g Sugar, Brown, Soft, Average

3 Sm/285g Banana, Raw, Flesh Only, Average

40 g Sugar, Light Brown, Soft, Silver Spoon

2 Egg/112g Eggs, Medium, Average

150 ml Milk, Skimmed, Average

250 g Flour, Wholemeal, Self Raising, Allinson

1 Tsp/2g Baking Powder, Average

15 g Breakfast Cereal, Porridge Oats, Quaker

150 g Blueberries, Fresh, Raw

 

Method

 

Pre heat oven to 200 degrees or gas mark 6

 

1. Beat the margarine and sugar together until sift and fluffy

 

2. Stir in the eggs and mashed bananas

 

3. Mix together the flour and baking powder. Add the flour and milk a little at a time to the margarine mixture. Beating well in between.

 

4. Gently stir in the blueberries and divide mixture between 18 small muffin cases.

 

5. Sprinkle a little porridge oats on the top of each muffin.

 

Bake in the oven for 12-15 mins or until golden brown and springy to the touch.
