Tasty Tomato Relish

Ingredients

6 Medium Tomatoes

1 Medium Red Onion

25g Dried Stoned Dates

1 Small Red Chilli Pepper

100g Fresh Coriander, chopped

1 Lime, juiced

¼ Tsp Ground Pepper

80g Fresh Rocket

Method

  1. Halve, deseed and chop the tomatoes.
  2. Peel and finely chop the onion.
  3. Finely chop the dates.
  4. Deseed and chop the chilli (I suggest wearing rubber gloves for this!)
  5. Place everything in a bowl and mix together, adding the lime juice and chopped coriander.
  6. Season with a pinch of cayenne pepper and garnish with rocket leave.

Gorgeous served with chicken or fish.
