Stir Fry Sprouts

Ingredients

225 g Brussels Sprouts, Raw, Average

1 Potato/212g Potatoes, White, Raw, Safeway*

100g Onions, Raw, Average

8 ml Oil, Vegetable, Pure, Olivio*

½ Med/80g Peppers, Capsicum, Red, Raw, Unprepared, Average

1 Tsp / 0.6g Bay Leaves, Dried, Average

1 fl oz/30ml Stock, Chicken, Fresh, Tesco*

Method

  1. Trim sprouts and slice length ways. Peel and cube potato. Chop the onion and seeded pepper.
  2. Heat the oil in a pan over a medium heat and stir in potato, onions and a bay leaf. Cook for around 5 minutes.
  3. Add the sprouts, pepper and stock. Cover and cook until the vegetables are tender.
  4. Remove the bay leaf and season to taste with salt and black pepper. Serve immediately.
