Parsnip Mash

Ingredients

250g Parsnip

200g Cooking Apples, Weighed with skin and core

500g Potatoes

10g Low Fat Butter

25ml Skimmed Milk

1 Clove Garlic

  1. Wash, peel and dice the parsnip and potatoes.
  2. Place in a pan of boiling water and cook for 10 minutes.
  3. Peel, core and dice the apple, add to the pan cooking for a further 5-10 minutes.
  4. Drain and add finely chopped garlic.
  5. Mash well adding the butter and milk.

Serve immediately
