Garlic Butter Langoustines with Baby Spinach and Cherry Tomatoes

Ingredients

  • 400g Langoustines
  • 3 Cloves Garlic, crushed
  • 1oz/28g Margarine, Flora Light
  • 180g Baby Spinach
  • 160g Cherry Tomatoes
  • 1tsp Mixed Herbs

Method

  1. Melt the margarine on a low heat then remove from the heat.
  2. Add the crushed garlic, mixed herbs and langoustines, mix well and leave for 30 minutes.
  3. Heat a pan on a high heat, add the langoustines. Cook for around 4 minutes on one side, then flip and cook for a further 2 minutes on the other side.
  4. While the langoustines are cooking, wash the spinach and add to the plates with the cherry tomatoes and any seasoning.
  5. Add the cooked langoustines and serve.
