Cous Cous with Watercress and Tomato

Pitta Bread

Ingredients

200 g Cous Cous, Plain, Dry Weight, Sainsbury's*

1 Bag/100g Watercress, Waitrose*

100g Onions, Red, Raw, Average

2 Lge Tomato/364g Tomatoes, Fresh, Raw, Average

2 Tbsp/30ml Oil, Olive, Average 

1 Tsp/2g Lemon, Peel, Raw 

1 Lemon Juiced/35˝ml Juice, Lemon, Fresh, Average 

 

Method

  1. Place the couscous, juice and zest of one lemon and olive oil into a large bowl.
  2. Stir in 300ml of boiling water, season well and leave to soak for 10 minutes or until the water has been absorbed.
  3. Chop and deseed the tomatoes, finely slice the onion and chop the watercress.  Stir into the couscous and serve.
