Cous Cous with Watercress and Tomato

Ingredients
- 200 g Cous Cous, Plain, Dry Weight, Sainsbury's*
- 1 Bag/100g Watercress, Waitrose*
- 100g Onions, Red, Raw, Average
- 2 Lge Tomato/364g Tomatoes, Fresh, Raw, Average
- 2 Tbsp/30ml Oil, Olive, Average
- 1 Tsp/2g Lemon, Peel, Raw
- 1 Lemon Juiced/35½ml Juice, Lemon, Fresh, Average
Method
- Place the couscous, juice and zest of one lemon and olive oil into a large bowl.
- Stir in 300ml of boiling water, season well and leave to soak for 10 minutes or until the water has been absorbed.
- Chop and deseed the tomatoes, finely slice the onion and chop the watercress. Stir into the couscous and serve.
