Chicken and Vegetable Casserole

Ingredients

  • 600g Chicken, Breast, Diced, Average
  • 150g Sweetcorn, Frozen, Average
  • 2 Leeks/200g Leeks, Trimmed, Waitrose
  • 8 Med Stalks/320g Celery, Raw
  • 200g Peas, Frozen, Average
  • 2 Servings/40g Gravy, Chicken, Granules For, Dry Weight, Bisto
  • 1 Cube/300ml Stock Cubes, Chicken, Prepared, Oxo
  • 2oz/56g Flour, Plain, Average

Method

  1. Preheat oven to 180oC
  2. Place the flour in a bowl and cover the chicken in flour before placing in a large casserole dish with a lid(do not dispose of flour).
  3. Chop leeks and celery, and add into the casserole dish along with sweetcorn and peas.
  4. Prepare the stock as instructed and add to casserole dish.
  5. Add the remaining flour to the gravy granuals and prepare as instructed before adding to casserole dish.
  6. Mix throughly and place in the preheated oven for two hours, stiring a couple of times during the cooking period.
