Chicken and Pear Salad

Ingredients

2 Medium Conference Pears

1 Lemon, Juiced (35ml)

250g Mixed Salad Leaves

200g Chicken Breast, Roast without Skin

2 Tbsp/30ml Vinaigrette Style Salad Dressing, 95% Fat Free

Method

  1. Slice the pears in half, remove core and cut into wedges. Dip into the lemon juice to prevent browning.
  2. Chop cooked chicken into strips and place in a large bowl with the salad leaves.
  3. Add the pear wedges, drizzle over some fat free dressing and serve.
