Apple & Celeriac Soup

Ingredients

100g Apples, Cooking, Raw, Peeled, Average

1 Med/180g Onions, Raw, Average

2 Cube/14g Stock Cubes, Vegetable, Average

1 Tsp/2g Curry Powder, Average

1 Tbsp/3.8g Parsley, Fresh, Average

300 g Celeriac, Raw, Average

Method

  1. Peel and chop the onion, place in a large pan along with enough stock to cover. Add the curry powder and simmer for around 5 minutes.
  2. Peel and chop the celeriac into small cubes. Add to the pan with the rest of the stock, cover and cook for 15 minutes.
  3. Peel and core the apple and cut into chunks. Add to the pan and cook for a further 5 minutes.
  4. Liquidise is a food processor and serve sprinkled with chopped parsley.
