Broccoli Soup

Ingredients

1 lb/450g Green Broccoli

1 Med Onion

2 Pints/1100ml Vegetable Stock

300g Potatoes, Weighed with Skin, Flesh Only

1 Tsp Soy Sauce

2 Tsp Sunflower Oil

100g Leeks

Method

  1. Peel and chop the onion and leek.
  2. Put the oil into a large saucepan and fry the onion and leek over a medium heat until tender.
  3. Peel, wash and chop the potato. Wash the broccoli and cut into small pieces.
  4. Add the soy sauce, potato, broccoli and stock to the pan. Bring to the boil and simmer until tender.
  5. Once cooked, blend in a food mixer and then season, with a little salt and pepper.
