Broccoli Soup
Ingredients
- 1 lb/450g Green Broccoli
- 1 Med Onion
- 2 Pints/1100ml Vegetable Stock
- 300g Potatoes, Weighed with Skin, Flesh Only
- 1 Tsp Soy Sauce
- 2 Tsp Sunflower Oil
- 100g Leeks
Method
- Peel and chop the onion and leek.
- Put the oil into a large saucepan and fry the onion and leek over a medium heat until tender.
- Peel, wash and chop the potato. Wash the broccoli and cut into small pieces.
- Add the soy sauce, potato, broccoli and stock to the pan. Bring to the boil and simmer until tender.
- Once cooked, blend in a food mixer and then season, with a little salt and pepper.
